OlyKraut Flavor Product List
OlyKraut LLC uses all organically produced ingredients and we source locally as much as possible. Luckily for us, there are abundant farms in the Pacific Northwest and during the summer and fall, we are able to operate within our regional food system with some notable exceptions like the ginger and the salt. We add some Celtic Sea Salt to each batch for the added minerals and flavor.
All of our fermented vegetables are delicious in salads, sandwiches, mixed in with cooked vegetables, beans, grains and even on their own. Some favorite combinations of ours include Fire Chi and peanut butter sandwiches, baked potatoes with Spicy Curry Kraut and Avocado, Spicy Garlic Chi and Tahini slaw, and of course, the old standard real or vegetarian sausage with Original or Eastern European Sauerkraut.
Original Raw Sauerkraut
Original Raw Sauerkraut contains just green cabbage, sea salt, and Celtic Sea Salt and is a tried and true favorite with all the delicious goodness and familiarity of traditional sauerkraut with the added crunch and kick of being raw and unpasteurized.
Eastern European
Eastern European contains green cabbage, onion, apple, carrot, caraway seeds, grapefruit juice, sea salt, and Celtic Sea Salt. This one is delicious and nearly as versatile as the original. The caraway seeds and apple give it a distinct flavor that has made it one of our most popular flavors.
Spicy Garlic Chi
Spicy Garlic Chi contains green cabbage, onion, carrot, garlic, daikon, ginger, dried chile flakes, sea salt, and Celtic Sea Salt. This one is the OlyKraut spin on the traditional kimchi flavor combination of garlic, ginger, and chiles. We use green cabbage and the texture is more shredded than course. We also use mild chiles so that it can be enjoyed by a broader selection of palettes than many kimchis.
Fire Chi
Fire Chi contains Napa Cabbage, Choy, onions, carrots, daikon, garlic, scallions, ginger, sea salt, dried chiles, and Celtic Sea Salt. This is our traditional kimchi and it is HOT! We went all out and finally achieved a heat level no one has yet refuted. This is a summer seasonal blend so look for it between July and September.
Curry Kraut
Curry Kraut contains green cabbage, onion, carrot, ginger, garlic, sea salt, chile flakes, curry powder, and Celtic Sea Salt. Spicy Curry is unique and delicious with an Indian curry flavor and color, it’s great with cooked vegetables, potatoes, avocados, and even on buttered toast.
Spring Nettle Kraut
Spring Nettle Kraut contains green cabbage, onion, garlic, jalapeño, fresh nettles, sea salt, and Celtic Sea Salt. This is a seasonal product due to the availability of nettles, but when it is available it is our best seller. It is such an excellent combination of flavors and the green nettles are amazing as food and medicine.
Onion Harvest Kraut
Onion Harvest Kraut contains yellow onions, green cabbage, sweet onions, sea salt, fresh ground pepper, thyme, and Celtic Sea Salt. This is our seasonal concoction created to celebrate the bountiful onion harvest we usually have here in the Fall. The combination of thyme and pepper with the fermented onions is sweet and savory and truly delectable. It is an excellent stand alone salad as well as a superb condiment.
Sea Vegetable Sauerkraut
Sea Vegetable Sauerkraut contains green cabbage, onion, garlic, jalapeño, sea salt, dried hijiki, and Celtic Sea Salt. This flavor was popular but we decided to take advantage of the locally available sea vegetables and it has thus become a seasonal flavor. We are working with local mariner types to coordinate a spring harvest in the cleanest waters of Puget Sound for next year’s batch. It will likely contain kelp in place of hijiki.
Sour Pickles
Sour Pickles contain cucumbers, garlic, grape leaves, flowering dill, sea salt, and Celtic Sea Salt. This is a seasonal offering that we sell in bulk and in jars at the end of summer, fall, and winter. Due to its crunchiness and unique lacto-fermented it has a wonderful sour flavor that satisfies the pickle lover.
