OlyKraut handcrafts sauerkrauts, pickles, and sipping brines in Olympia, Washington. For nearly a decade we’ve developed our original recipes, using centuries-old preservation techniques, and sourcing the best possible ingredients. We seriously shred, thanks to our fantastic employees, delivery drivers, and farmers’ market folks who live across the Pacific Northwest.

Our Core Team

Sash Sunday, Founder

After much consideration, Sash discovered that the best way for her to contribute to the food system and economy she would like to see is by putting her fermentation fanaticism to good use turning regional farmers’ produce into delicious sauerkraut. She has spent the last decade working directly with farmers, learning about sustainability and agriculture, and wondering how to restructure the economy so it could support a better future. Sash is constantly trying to learn more about sustainability and generative business so that every decision she makes as an owner supports those values. She graduated from the Evergreen State College where she focused on Food, Fermentation, and Sustainable Agriculture and earned her MBA in Sustainable Systems at Bainbridge Graduate Institute at Pinchot University.

Shaula Massena, Impact Investor

Shaula brings a blend of financial and social experience from her work as a private equity investor and as a foundation grant maker. Shaula has been making direct private investments since 2006 and has explored the gamut of grantmaking, microenterprise, debt, convertible debt and private equity. She is invested in a handful of local agricultural products companies as well as some global fair trade food companies. Shaula received her Sustainable MBA from the Bainbridge Graduate Institute at Pinchot in 2008. Between undergrad and business school she spent 10 years honing her problem analysis and business management skills at tech companies from megacorp to startup. She's delighted to be supporting the growth of probiotics!

Zoë Knutson-Bradac, Kitchen Manager

Zoë grew up in Olympia, attending Capital High School and South Puget Sound Community College before getting her Bachelor's of Art in Sustainable Agriculture and Community Development at The Evergreen State College. Upon graduating TESC, Zoe moved to Chehalis, WA to pursue an opportunity at Willapa Hills Farmstead Cheese making raw, aged sheep and cow milk cheese. She went on to make cheese, butter, yoghurt, sour cream and a variety of other fermented dairy products for Jacob's Creamery out of Centralia.

In 2010, Zoë returned to Olympia to farm shellfish at Kamilche Sea Farms, where she cultivated, harvested and processed Mediterranean Mussels distributed locally from Olympia to Seattle. While sea farming, Zoë became The Blue Heron Bakery's bread baker, making breads from scratch with traditional mixing, fermenting and proofing practices. With her background in food science and fermentation, Zoë came on at OlyKraut in August 2015 as the Kitchen Manager. She is excited to work for another small business concerned with sourcing ingredients locally and sustainably and providing a healthy, medicinal food product to her community, friends and family!

Iris Hilburger, Farmers Markets and Events Coordinator

Iris joined OlyKraut in 2014 first working in the kitchen and then quickly joined the market team. In early 2015 she stepped into the role of Farmers Market Coordinator and has since been managing the farmers market and outreach efforts from Portland, OR north to Seattle, WA. Before joining OlyKraut Iris worked as an environmental and outdoor educator guiding trips in Oregon, New Mexico, and Alaska. As time allows, she still enjoys getting out and sharing her love of fungi, plants, and natural history.

Nein St. Helens, Office Manager

Nein St. Helens started at OlyKraut as the Kitchen Manager ​in 2013 when she moved to Olympia to start a small CSA farm. As the business grew, she made the leap to Office​ Manager and now takes care of the bookkeeping and sales and is a chief ingredient in the OlyKraut magic. She has a background in events production, farming, and troubleshooting. Before working at OlyKraut she was the Visual Arts Production Coordinator for Bumbershoot Arts Festival in Seattle, WA. In her free time she helps raise pigs, chickens, sheep and a giant garden of delicious vegetables on a small farm outside of Olympia.
